Vic launches La Mocadera, a fair dedicated to Catalan artisan charcuterie taking place on February 21-22. The event combines market, workshops and tastings to showcase a centuries-old culinary tradition and the crafts that have preserved it.

Plaça dels Sants Màrtirs hosts this weekend a proposition that goes beyond the conventional market. La Mocadera recovers the name of the traditional craft linked to preparing the pig’s mocada during slaughter, a task requiring technical skill and deep product knowledge. Historically performed by women, this craft has been passed down generation after generation, shaping the gastronomic DNA of the Plana de Vic.
The fair brings together thirty exhibitors specialising in traditional methods and certified raw materials. Featured products include Vic longaniza with Protected Geographical Indication, somiatruites and butifarras made following ancestral recipes. The aim is not just to commercialise, but to preserve artisan techniques that define Catalan culinary identity.
Immersive experiences for discerning palates
The programme includes “The pork route: from Ca la Mocadera to Plaça dels Porcs”, a journey through historical heritage culminating in an artisan charcuterie tasting. El Rebost space offers a selection of six charcuterie products paired with wine from Celler Clarella, a sensory experience designed to discover nuances and textures.
Workshops include “More than a sandwich”, a proposal that rethinks gastronomic combinations based on traditional products. The Charcuterie Classroom features live demonstrations with master charcuterie makers who share production techniques, from initial meat preparation to the curing process.
Sustainability and the future of tradition
This edition incorporates a focus on animal welfare practices and organic production. Through talks and information points, the fair highlights how Osona producers are adapting centuries-old methods to contemporary sustainability criteria without abandoning the product’s essence.
La Mocadera 2026 confirms Vic as a benchmark for artisan charcuterie culture. Beyond tasting, the event preserves a gastronomic legacy linked to the territory and reinforces the value of traditional crafts in a context of responsible consumption and local produce.
